Ingredients
- 3-4 ripe smashed bananas (NOTE: Ripen Bananas in oven on baking sheet with parchment paper at 300 degrees for 20-25 minutes. Banana skins turn black, but bananas are juicy. Makes moist banana bread)
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 beaten egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups flour
- 1/3 cup chopped walnuts (Can make without nuts)
- Buttered 4” X 8” loaf pan
Directions:
Mix butter into mashed bananas. Mix sugar, egg, and vanilla. Sprinkle baking soda and salt over mixture and mix into bananas Add flour last and mix. Pour mixture into buttered 4×8” pan. Bake at 350 degrees for one hour. Check doneness with toothpick. Cool on rack
