Oatmeal Drop Cookies

  • 1/2 cup butter                                 
  • 1 1/4 cup sugar                               
  • 2 eggs                                             
  • 1/3 cup molasses                                     
  • 1 3/4 cup all-purpose flour               
  • 1 teaspoon soda
  • 1 teaspoon salt                                                  
  • 1 teaspoon cinnamon
  • 2 cups rolled oats
  • 1 1/2 cup raisins or King Arthur dried fruit         
  • 1/2 cup chopped nuts (optional)                         
  1. Heat oven to 400oF.
  2. Mix butter, sugar, 2 eggs, and molasses thoroughly.
  3. Stir dry ingredients together in another bowl (I don’t – I just add it all to the mixing bowl) and add to butter-egg-molasses mixture.  Mix until blended.
  4. Stir in the oats, nuts (if using) and raisins or dried fruit.
  5. Drop the dough by rounded teaspoonfuls (or scoopfuls) about 2” apart on a lightly greased baking sheet.  Bake 8 to 10 minutes or until lightly browned.

It makes about 3 1/2 dozen cookies.
