- 1/2 cup butter
- 1 1/4 cup sugar
- 2 eggs
- 1/3 cup molasses
- 1 3/4 cup all-purpose flour
- 1 teaspoon soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 cups rolled oats
- 1 1/2 cup raisins or King Arthur dried fruit
- 1/2 cup chopped nuts (optional)
- Heat oven to 400oF.
- Mix butter, sugar, 2 eggs, and molasses thoroughly.
- Stir dry ingredients together in another bowl (I don’t – I just add it all to the mixing bowl) and add to butter-egg-molasses mixture. Mix until blended.
- Stir in the oats, nuts (if using) and raisins or dried fruit.
- Drop the dough by rounded teaspoonfuls (or scoopfuls) about 2” apart on a lightly greased baking sheet. Bake 8 to 10 minutes or until lightly browned.
It makes about 3 1/2 dozen cookies.
