This is Bear’s and my favorite breakfast! My grandsons like it, too.
Ingredients
- 2 tablespoons butter
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1/4 teaspoon salt
- Maple Syrup, for serving (opt)
- Lemon juice and powdered sugar or cut-up fruit, if desired
Instructions
- Heat oven to 400o. Melt butter in a 9” pie plate, in oven; brush butter over the bottom and side of pie plate.
- Beat eggs slightly in medium bowl with wire whisk or hand beater. Beat in flour, milk and salt just until mixed. Do not overbeat or pancake may not puff. Pour into pie plate.
- Bake 25 or 30 minutes or until puffy and deep golden brown. Sprinkle with lemon juice and powdered sugar or topped with fruit, if desired. Serve immediately.
Note: sometimes I sprinkle some blueberries or thin apple slices on top of the batter before baking. Can also sprinkle with a little cinnamon sugar. This recipe never fails and mixes up quickly with minimal mess.
