Mix together:
- 1/4 cup plus 2 T cocoa
- 2 1/4 cups flour
- 1 1/2 tsp. baking soda
- 1 1/2 cups sugar
- 3/4 teaspoon salt
Make a well in batter and add:
- 1 1/2 tbl. vinegar
- 1 1/2 tsp. vanilla
- 3/4 cup oil
- 1 1/2 cups water
Stir above until smooth. Fill cupcake liners half full.
Filling
- 8 oz. pkg. cream cheese
- 1 egg
- 1/2 cup sugar
- 1/8 teaspoon salt
- Six ounce package chocolate chips
Blend until smooth.
Put 1 tsp. filling in center of each cupcake.
Bake at 350 15-20 minutes until edges spring back when touched lightly. Makes 30 cupcakes
