Chocolate Cream Cheese Cupcakes

Mix together:

  • 1/4 cup plus 2 T cocoa                     
  • 2 1/4 cups flour                              
  • 1 1/2 tsp. baking soda
  • 1 1/2 cups sugar
  • 3/4 teaspoon salt

Make a well in batter and add:

  • 1 1/2 tbl. vinegar                             
  • 1 1/2 tsp. vanilla                             
  • 3/4 cup oil
  • 1 1/2 cups water

Stir above until smooth.  Fill cupcake liners half full.

Filling

  • 8 oz. pkg. cream cheese                   
  • 1 egg                                              
  • 1/2 cup sugar                         
  • 1/8 teaspoon salt
  • Six ounce package chocolate chips    

Blend until smooth.

Put 1 tsp. filling in center of each cupcake.

Bake at 350 15-20 minutes until edges spring back when touched lightly.  Makes 30 cupcakes
