Apple Streusel Coffee Cake

Ingredients

  • 2 1/4 cup flour
  • 3/4 cup sugar
  • 3/4 cup butter
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg 
  • 3/4 cup buttermilk
  • Apple or Cherry Pie Filling (Dawn used Cherry Pie Filling)
  • NOTE: Apple Pie Filling – can add 1/2 teaspoon cinnamon and 1/3 cup raisins
  • Cherry Pie Filling – add 1/2 teaspoon almond flavoring

Instructions

  1. Combine the flour, sugar.  Cut in the butter until crumbly.  Set aside 1/2 cup of the mixture.
  2. To the remaining mixture, add the baking powder, baking soda.  Set aside.  Combine the egg and buttermilk.  Add to dry ingredient, stirring just until moistened.  
  3. Spread 2/3 of the batter in a greased 9” pan.  Add the pie filling.  Spoon remaining batter on top.  Sprinkle with reserved crumb mixture on top.
    Bake at 350oF about 55 minutes.
